Did you know that a ‘roccolo’ is a cylindrical stone structure, often surrounded by high hedges or trees used by hunters as a shelter and vantage point for hunting? In our case, it’s not a building but an amazing Italian cheese from the Lombardia region.
The cheese is encased in a thin, rough, brown-colored rind. The centripetal- meaning move towards the center- aging process, grants the paste a sweet, buttery texture toward the outside while the center is tangy and crumbly. It is aged for an average of 6 months.
The Roccolo Valtaleggio pairs well with full bodied red wines and dark chocolates.
