Goat Cheese and Roasted Red Pepper Ravioli with fresh basil, fig glaze and a mixed green salad
- 1 pkg. Glorioso's goat cheese and roasted red pepper ravioli
- 2 tbsp. Chopped fresh basil
- 1 pkg. Mixed spring greens
- 1 C. Grape tomatoes
- 4 tbsp. Bleu cheese crumbles
- 2 tbsp. chopped walnuts
- 2 tbsp. shredded or grated Parmigiano Reggiano

Bring 5 quarts of water to a boil. Add 2 tbsp. salt to the pot. Add package of ravioli and cook according to package directions (3-5 minutes).
While the ravioli is cooking, wash the mixed greens and tomatoes, toss together along with the bleu cheese crumbles and walnuts. Dress with a dash or two of olive oil and the fig glaze.
Drain ravioli. Drizzle with olive oil. Chop 2 tbsp. basil and add to the ravioli. Plate the ravioli and drizzle with the fig glaze, and add the grated Parmigiano Reggiano.
Serve the ravioli and salad along with Glorioso’s Montepulciano. Smile while you listen to your date rave about your mad cooking skills. Give yourself a high-five.
